Tomato soup

Ingredients:

  • 20 spoonfuls olive oil
  • 1 small onion
  • 1 leek
  • 2 cloves of garlic
  • 700 grams ripe tomatoes
  • 850 ml chicken stock
  • 2 spoonfuls tomato concentrate
  • Salt
  • Black pepper
  • Sugar
  • ½ ciabatta bread
  • 12 basil leaves
  • Extra virgin olive oil

Method:

Heat up the oil in a large pot.

Add the onion, leak and garlic cloves. Cook these ingredients over a low flame, until they are soft.

Put the tomatoes into a bowl and cover them with boiling water. Leave them for a minute.

Strain the tomatoes and cover them with cold water. Leave them for another minute.

Then peel the tomatoes, chop them into pieces and add them to the onion, leak and garlic mixture. Add the chicken stock, tomato concentrate, salt and pepper. Add a pinch of sugar as well. That will help to bring out the flavour of the tomatoes.

Add the mixture to boiling water, cover the pot with a lid and cook over a low flame for 30 minutes.

Cut up the bread into pieces and add it to the various soup dishes you will be serving the soup with.

Finally, add the basil and pour the soup over the bread. Before you serve, you can drop a dash of extra virgin olive oil into the soup.
