Sweet potato panellets

Ingredients:

  • 100g cooked sweet potato
  • 200g almond flour
  • 200g sugar
  • 30g egg white
  • 1 egg
  • 1 egg yolk
  • 100g pine nuts

Method:

Mix the cooked sweet potato with the almond flour, sugar and egg white. Once well mixed, cover and set aside in the fridge overnight.

After 24 hours, remove from the fridge and roll into balls, each weighing 15-20g.

Beat the egg, and spread the pine nuts out on a plate. Dip the little balls of sweet potato in the egg, and then roll them in the pine nuts. Place them on a baking sheet lined with greaseproof paper as you go along.

Brush with beaten egg yolk and bake in the oven for 10 minutes at 220-240ºC until golden.
