Coca de vidre bread, roasted vegetables, marinated sardines with mustard and rocket salad

Ingredients:

  • 100 g plain flour
  • 60 ml olive oil
  • 25 ml water
  • 100 g sardines
  • 100 g of sugar
  • 100 g salt
  • 60 g aubergines
  • 60 g red peppers
  • 25 g rocket
  • 25 g mustard leaves
  • 5 g thyme

Method:

For the coca de vidre bread, mix the flour, olive oil and water to make the bread dough. Let it sit for 30 minutes, portion the dough and stretch it into very thin rectangles, 12 x 5 cm, and bake.

Clean, fillet and debone the sardines. Soak them in water and ice for 10 minutes. Marinate them with salt and sugar for the necessary time according to their size, and smoke them.

Salt the peppers and aubergines and roast them in the oven or on a flame until cooked through. Turn them over half-way through. Once done, peel them and set them aside. Deseed the peppers.

Clean the shoots and plate everything.
